Happy August Ramblers! Can you all believe it’s already August 1st? I definitely can’t. I feel like the start of summer was just yesterday. Summer vacation might be over soon, but the heat is definitely not going anywhere anytime soon. I don’t know about you guys but, personally, this heat is making me crave ice cream so much. Like all the fudging time. As delicious as ice cream might be, it’s definitely not the best thing for my waistline, so I have turned to a much healthier and still wonderfully delicious alternative.
If you have an Instagram, you probably have seen thousands of pictures of these healthy ice creams, often called “Nice-creams”, perfectly placed in a coconut bowl or mason jar with all kinds of fruit strategically placed on top so that it meets Insta standards. Don’t get me wrong, I’m one of those people sometimes, but when it comes to nice-cream, it almost goes directly into my mouth straight from the blender.
So, since we still have some hot days and heatwaves ahead of us, here is the recipe I use for chocolate nice-cream. As you’ll see, the best thing about this is how easy and cheap it is to make!
Time: 5 - 10 minutes
Level: Easy.. like a 5-year old could do it (well, with supervision cause blender blades are scary)
Get your blender out. Put all the ingredients in the blender. If you hadn’t cut your banana before freezing it (which I highly recommend), I would suggest cutting it up into small pieces before putting it into the blender.
For the milk, I usually use unsweetened almond milk, but it would probably be good with coconut milk, regular milk, macadamia nut milk, cashew milk and so on! If you want a bit more sweetness to the nice-cream, then go with the sweetened versions of the milks.
Once everything is in the blender, blend it all up until it is smooth like a very thick smoothie or soft ice cream. Pour the contents into your favorite bowl or whatever dish pleases you. Add whatever toppings you want, grab a spoon, and dig in!
See? That was super nice and easy, wasn’t it? Plus, you won’t have that annoying feeling of guilt afterward because this is healthy ice cream.
If you’re not a chocolate fan, then just replace the cocoa powder with vanilla or whatever flavor you prefer. Or if you want multiple flavors, like peanut butter and chocolate, then just follow this recipe and add however much peanut butter you would like! If adding the peanut butter makes the nice-cream a little too thick, then just add some more milk. For a little visual reminder of the base recipe, you can save the picture at the top!
